This light and refreshing Mint Sour Cream Sauce is a great topping for everything from salmon filets to lamb chops. Enjoy it this Spring and you'll actually be excited when the mint takes over your garden!
Ingredients
2 teaspoons shallot, finely minced
2 teaspoons red wine vinegar
2 cups fresh mint, loosely packed
1 cup sour cream
1 or 2 cloves garlic, minced
¼ teaspoon salt
Directions
Combine the shallot and red wine vinegar in a bowl and let it meld while you prepare the other ingredients.
Add the garlic and salt to a mortar and pestle and grind the ingredients into a paste.
Chop the mint and grind it into to the garlic paste using the mortar and pestle.
In a bowl, mix together the mint and garlic paste, the sour cream, and the red wine vinegar and shallot mixture until well blended.
